					Head cabbage souffle served on Sardinian Pecorino cheese fondue
					and home made pistachio syrup
					FIRST COURSE
					Ricotta and herbs ravioli with duck ragout,
					Parmesan cheese mousse and almond
					MAIN COURSE
					One plate to choose between:
					Veal stew with wine, herbs, sage and thyme
					served with potato, leaks and juniper cream
					or
					Lamb ribs in bread crust with aromatic herbs
					served with backed tender onion and carrot mousse
					DESSERT
					Red Fuji Apple crumble with lime and ginger
					accompanied by ricotta cheese mousse
