March 8 – A Woman: Sweet & Strong

Chef Enrico Lo Presti presents a “Sweet & Strong” tasting menu featuring traditional Tuscan dishes. A grand finale with 7 master pastry chefs—undisputed stars of the Tuscan culinary scene—coming together for the very first time. Each of them will present an original, never-before-seen creation.

With sweet surprises from: Biscottificio Antonio Mattei; La Gelateria della Passera by Cinzia Otri – awarded “3 Cones” by Gambero Rosso; Cioccolateria Angiolini: chocolate truffles; Pasticceria Cosi (participant in the 2019 edition of Cake Star, the Real Time TV talent show); pastry chef Roberto Rinaldini: macarons and mimosa cake; and gelato master Vetulio Bondi: “black cone” and… black gelato!

The evening menu

  1. Finger food includes guacamole with transparent tortillas, small choux pastries filled with truffle mousse, goat cheese blinis with salmon and dill, tomato bavarois with burrata foam, and “pine leaves” with potato brunoise and octopus soppressata.

  2. A corner of Tuscan cured meats and cheeses with artisanal schiacciata is accompanied by cauliflower “mimosa” puff pastry, a ginger-infused guinea fowl salad with baby spinach and pistachios, stuffed “verzette” in a sweet-and-sour style with pork loin, chicken livers and fennel seeds, “mimosa” panzanella with prawns and sweet-and-sour red onion, and a savoury gorgonzola and honey cheesecake.

  3. Hot dishes include pumpkin crepes au gratin with Tuscan sausage and sultanas, smoked risotto with aged ricotta finished with traditional balsamic vinegar, “Peposo in Dolceforte” (a traditional Tuscan spiced beef stew), and Florentine-style herbs.

  4. The price is €30 all inclusive, with buffet dinner served from 7:30 pm to 9:30 pm, followed by a grand finale with pastry chefs.
