Tuscan typical cuisine and "Pici"
Food
Pici are a typical product of Tuscan regional cuisine. They are a type of pasta similar to a rustic spaghetti that is made with water, flour and oil.
Even today they are made in order to respect the ancient process, such as bronze drawing. This detail is what gives the pici their characteristic roughness to better retains the sauce.
This format of fresh pasta is great with many sauces, the Chef of our La Chiostrina Restaurant offers it in a new key to be enjoyed in white veal sauce and thyme with green asparagus and cow ricotta coulis with nuts.
